Pizza Pastry Filling
Makes 20 yummy pizza pockets – the perfect side for a delicious meal
Ingredients
- Pastry World Puff Pastry Sheets rolled / 5” Squares
- 1 chicken breast, cubed
- 1 tsp tandoori masala
- ½ tsp chilli powder
- 2 tbsp ketchup
- ½ small red onion, chopped
- ¼ red pepper, diced
- ¼ green pepper, diced
- 1 handful sweetcorn
- 1tbsp oil
- 100g grated cheddar cheese
- 1 egg
Method
- Marinate the cubed chicken breast in tandoori masala, chilli powder, ketchup and salt to taste
- Dry roast the red onion, red and green peppers and a handful of sweetcorn
- Heat up a separate pan and pour in the oil. Add in the marinated chicken and cook on high, mixing gently. Put a lid on and slow cook for 20 minutes
- Lift off the lid, up the heat and let the chicken dry out. Then add the roasted veg and mix.
- Let it cool completely before adding the grated cheddar
- Fill your pastries as you desire, creating plaits or triangles, brushing with egg for a golden glaze
